I posted the above picture to my Instagram and I got a loooootttt of requests for the recipe for my zucchini hash. So, here you all go!
Preheat oven to 375 degrees.
Place grated zucchini in a colander over the sink. Using a clean dish towel or cheese cloth, drain zucchini completely.
Add salt, black pepper, and garlic powder and gently toss to combine.
In a large bowl, combine zucchini, flour, Parmesan, oil, garlic, and egg.
Spray a baking sheet with cooking spray. Spread the zucchini mixture evenly.
Bake for 30 minutes.
